  • 200g sweet potato starch noodles (dangmyeon)
  • 150g beef (ribeye or sirloin, thinly sliced) or tofu (for vegetarian option)
  • 1/2 onion (thinly sliced)
  • 1 small carrot (julienned)
  • 1/2 red bell pepper (thinly sliced)
  • 1/2 yellow bell pepper (thinly sliced)
  • 2 cups spinach (blanched and squeezed)
  • 5 shiitake mushrooms (sliced)
  • 1 egg (for garnish, optional)
  • 2 tbsp sesame oil
  • 1 tbsp sesame seeds

Japchae Sauce:

  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp sugar (or honey)
  • 1 tbsp minced garlic
  • 1 tbsp sesame oil
  • A pinch of black pepper

Preparation

1️⃣ Prepare the Ingredients

  • Soak the sweet potato noodles in warm water for about 20 minutes, then drain.
  • Slice the vegetables into thin strips.
  • If using beef, marinate it with 1 tbsp soy sauce, 1/2 tbsp sugar, 1/2 tbsp sesame oil, and a pinch of black pepper for at least 10 minutes.

2️⃣ Cook the Noodles

  • Bring a large pot of water to a boil and cook the noodles for 8-10 minutes until soft.
  • Drain and rinse with cold water to maintain a chewy texture.
  • Toss the noodles with 1 tbsp sesame oil to prevent sticking.

3️⃣ Stir-Fry the Ingredients

  • Heat 1 tbsp sesame oil in a pan over medium heat.
  • Stir-fry the onion, carrot, mushrooms, and bell peppers for 2-3 minutes until slightly softened.
  • Add the beef (or tofu) and cook until fully cooked through.
